A tasty recipe for Citizen Cane, with Appleton Estate V/X Jamaican rum, Dubonnet Rouge vermouth, caramel liqueur, passion-fruit puree, sugar cane juice, Fee Brothers peach bitters and overproof rum. Also lists similar drink

  • 1 oz Appleton Estate V/X Jamaican rum
  • 1 oz passion-fruit puree
  • 1/2 oz caramel liqueur
  • 1/2 oz overproof rum
  • 2 oz sugar cane juice
  • 3 dashes Fee Brothers peach bitters
  • 3/4 oz Dubonnet Rouge vermouth

First take slices of pear and place them on a saucer, pour on raw sugar, douse in the overproof rum, and light.
When caramelised this will become the drink garnish.

Pour the rest of the ingredients into a shaker, shake hard and fast and strain over crushed ice into a highball glass.
Serve.

Serve in a Highball Glass.

  • 1 splash grenadine syrup
  • 1/2 banana
  • 2 oz overproof rum
  • 4 oz coconut milk
  • 4 oz pineapple juice

Combine all ingredients in a blender with half a cup of crushed ice.
Blend well, pour into a tall glass, and serve.

Serve in a Pina Colada Glass.

  • 1 1/2 oz rum
  • 1 oz fresh lime juice
  • 1 oz overproof rum
  • 1/2 oz orgeat syrup
  • 2 oz fresh orange juice
  • 3/4 oz Orange Curacao liqueur

Shake all ingredients well and strain into an ice-filled double old-fashioned glass.
Garnish with slices of orange and lime, and serve.

Serve in a Old-Fashioned Glass.

Rum Sunday recipe

A luscious recipe for Rum Sunday, with dark rum, sweet sherry, grenadine syrup, vanilla ice cream and overproof rum.

  • 1 oz dark rum
  • 1/2 oz grenadine syrup
  • 1/2 oz sweet sherry
  • 2 tsp overproof rum
  • 3 tbsp vanilla ice cream

Blend briefly all ingredient (except overproof rum) with half a glassful of crushed ice.
Pour into a collins glass, float overproof rum on top, and sprinkle with grated chocolate.

Serve in a Collins Glass.

Loftus Special recipe

Check out this mouthwatering recipe for Loftus Special, with overproof rum, dark rum, white rum, apricot brandy, cherry heering, sugar syrup, grenadine syrup and lime juice.

  • 1 1/2 oz dark rum
  • 1 1/2 oz lime juice
  • 1 1/2 oz overproof rum
  • 1/4 oz sugar syrup
  • 2 - 3 dashes grenadine syrup
  • 3/4 oz apricot brandy
  • 3/4 oz cherry heering
  • 3/4 oz white rum

Shake all ingredients (except lime juice) well over crushed ice in a shaker.
Strain into a large highball glass over crushed ice, add lime juice, and serve.

Serve in a Highball Glass.
